Dr. Anael Santos is a Professor of Chemistry, Biochemistry, and Genetics in the Department of Health and Biomedical Sciences at the Adventist University of Health Sciences (ADU), in Orlando, Florida since 2007. He received his B.S. in Veterinary Medicine from Federal University of Uberlandia, Brazil (1999) and M.S. (2002) and Ph.D. (2005) in Nutrition and Biotechnology from North Carolina State University, NC. Between January 2006 and April 2007, Dr. Santos served as a Post-Doctoral, Research Associate at North Carolina State University, and worked with several research projects in the field of Nutrition, Biochemistry, Microbiology, and Biotechnology. He worked at the College of Veterinary Medicine and Animal Science (Faculdade de Medicina Veterinária e Zootecnia) of the Federal University of Uberlândia (Universidade Federal de Uberlândia), Brazil, as a Professor of Nutrition and Metabolism from 2009 to 2012. He has received 4 internationally recognized awards for excellence in Research in the field of Nutrition. He is a member of 3 scientific societies, and a member of the Editorial Board for peer-review journals, including journals of Nutrition, Biotechnology, and Agricultural Sciences. He has published many articles in peer-review journals and international conferences. His research interest is in the effect of nutraceuticals on intestinal health.
